Lemon Sponge Pie

The batter separates into two layers while it bakes to give you somewhat of a cakey top and a smooth custardy bottom. I love this pie, it's a little bit of work but well worth the trouble. Make it with a pre-made pie crust to save you some time. If you love the fresh tart taste of lemons you'll love this pie!

Lemon Sponge Pie
Betty Crocker Baking Classics
Adapted

Pastry for 9 inch one crust pie
3 eggs, separate
2 tbls grated lemon peel
2/3 cup lemon juice
1 cup milk
1 1/2 cups sugar
1/3 cup flour
1/4 tsp salt

Heat oven to 350 degrees.Prepare pastry. Beat egg whites in a large mixer bowl until stiff peaks form, reserve. Beat egg yolks; beat in lemon peel, lemon juice and milk. Add sugar, flour and salt; beat until smooth. fold lemon mixture into egg whites. Pour into pastry-lined pie plate. Bake until golden brown, 45 to 50 minutes. Serve with sweetened whipped cream if desired

  5. The Mexican casserole looks great - it has all my favorites in there. The pie is gorgeous! Refreshing and perfect for this time of year. And the watermelon lemondade - what a nice twist on lemonade. I'll have some of each, please!

  8. That was a grand dinner. I will be doing it all. The casserole looks easy enough for grad-student-son to make. Love the twist on the lemonade (so refreshing) and love anything made with lemons!

  12. I am a nut for Mexican food too and this looks really good! And another great idea for watermelon - I hope that my watermelons grow and make it without the critters eatin' 'em! I think I have about 4 going right now. Love the idea of adding some adult enhancements too LOL! I'm a nut for anything lemon too - and I love the BC classics. That pie sounds delicious!! I need to save this one to give it a spin soon!!

    The pie is so intriguiging. At first it just looked like ordinary lemon meringue pie, then I took a second look. Really interesting recipe.

    The lemonade looks delicious. I'll bet it would be great with a shot of vodka in it too.

  35. I like all of these recipes. Everything looks amazing. Watermellon drink reminds me of all the Mexican Festivals I use to go to in AZ. I loved it and have never been able to duplicate it. So you know I will be trying this one.

  45. Everything sounds perfect but I have a sweet tooth so that Lemon Sponge Pie is very appealing to me, after that delicious Mexican dinner. What can I say about that drink? Did you know that watermelon is also aphrodisiac? :-)
