Let me set the scene up for you...I was making breakfast for dinner, a vegetable frittata, fried potatoes with onion and green peppers, bacon and homemade bread. Before I started dinner I made this cake. My husband ate a full plate at dinner time. So much so that he pushed his chair away from the table and declared...I'm stuffed. I, knowing this cake would be cool enough to eat after dinner, let room for it. I told Paul I was going to get a piece of cake. Figuring that he was to full to want any, but still wanting to offer it, I asked him if he wanted a piece. "Ok, but just a small piece", was his reply. While he was into his second bite, he looked at me and said..."This is the best blueberry cake I've ever eaten. It's so soft, the blueberry's taste so good." He went on like this while he sat and ate piece after piece of cake till he had eaten...half the 13x9 inch pan himself! This cake is so soft and moist. The blueberry and lemon flavors are so perfect together, this is truly a cake you won't forget, and will want to make over and over again. This simple cake is one of the best cakes I've ever made. And even though the topping melted into the cake, I'll still put it on and let it melt into the cake. Why? Because the next time I make it, I want it to taste just like it did this first time I made it, absolutely heavenly.
I did add a few things to the recipe...
I added an extra tsp of vanilla and the zest of a lemon to the cake batter. The reserved 3/4 cup of topping seemed to disappear into the cake. If you wanted the crumb topping to be prominent on top of the cake, make more topping than the recipe calls for. And although the cake would be wonderful as is, I decided to add more lemon flavor by adding a Lemon Glaze to the top of the cake, now I had the lemon blueberry taste I so love! This is an extraordinary cake that you will absolutely love!

Blueberry Boyfriend Bait with Lemon Glaze

Ingredients
2 cups flour
1 1/2 cups sugar
2/3 cup butter
2 teaspoons baking powder
1 teaspoon salt
1 cup milk
2 eggs, separated
1 teaspoon vanilla ( I used 2 tsps of vanilla)
2 cups blueberries ( I used 3 cups of frozen blueberries thawed and drained well , coated with flour, shake off excess flour)
zest of one lemon

zest of one lemon
Lemon Glaze
2 TBLS lemon juice
about 1 cup confectioners sugar
Mix the lemon juice and confectioners sugar together, drizzle over top of baked cake while warm.
Directions
In a large bowl:
Mix together flour, sugar, & butter with an electric mixer. Reserve 3/4 cup of this mixture for topping.
To remaining flour, sugar and butter mixture, add salt, baking powder, vanilla, milk, & egg yolks.
Blend well.
Beat egg whites until firm peaks form.
Gently fold the firm egg whites into the batter and pour into a greased 9" X 13" baking pan.
Sprinkle blueberries over the top of the batter, sprinkle the reserved 3/4 cup of flour/sugar/butter mixture on top of the blueberries.
Bake in 350 degree oven for 40-50 minutes.
If using the Lemon Glaze, pour over cake after it has cooled to warm.

I grew up with a very similar cake called Blueberry Boy Bait cake My Mom never used Blueberries in it she used fresh picked Huckleberries, with a scoop of Ice cream it was heaven, heaven, & more Heaven.!!!
I saw this recipe on Christmas Eve and decided to make it for a family get together that evening....oh my, it was amazing...actually I've never tasted a homemade cake so light and fluffy....I doubled the recipe and put 2 pans in the freezer....took one to Branson and ate it in a cabin on New Years Eve..the last one I took out this past Friday night for the Ohio State Football game...we lost but the cake was a winner...from freezer to table...awesome... Funny, since I was out of town when I made it, I just spent nearly an hour trying to find it again...yea, I was so excited when it popped up...do not hesitate, this recipe is a keeper!

I made this because I had blueberry in my freezer. I added three cups of well drained frozen blueberries and 1 cup fresh to the recipe, Loved it.
My husband took half to work and the guys all ate it up. Thank for the recipe
Hi, I have just made this and am waiting to taste it...when do you add the lemon zest? I thought I had made a mistake but nowhere in the recipe does it say to add the lemon zest....
Anonymous, Sorry! You can fold the zest into the batter after it's made. I hope you loved it as much as we did!
Well I just made this it's in the oven. I took pics with iphone of the recipe. I was on my photo said to pour batter in pan, sprinkle berries and then the topping. Did that put it in the oven. Then I thought oh no I forgot the zest! Looked back on another pic and seen I missed the zest and the flour on the blueberries :( hope it turns out ok after I put the glaze on !
