Orange Muffins with a Cream Cheese Glaze
Last week work was exhausting, I was so glad to see the week come to an end. I was happy to be able to get back into the kitchen today and bake. Baking is therapeutic for me, it's what I love to do. I also love looking for recipes, it must be the thrill of the hunt ( hee hee)! I found this recipe on the Crisco site, since I love the flavor of orange I wanted to try it. Apple Pie Muffins
These are great muffins, the kids just love these. I have a tendency to bake things that the kids can grab and run with, and muffins fit into that category, along with cookies, bars and cupcakes. They'll grab these in the morning for breakfast as they're running out the door! My friend gave me this recipe and she doesn't remember where she got it. I'm sure there are lots of variations of apple muffins but this is the one I go to when I want to make fantastic apple muffins.
I made these in jumbo muffin tins and got 7 from the recipe, other than that I followed the recipe to the T.

Raspberry Muffins

I finally got to use up the rest of the raspberries I froze last summer. I love freezing berries so I can use them during the winter months. At Christmas last year I made Lemon Raspberry Tea bread using the raspberries I froze, I made them in mini ceramic loaf pans and gave them as gifts to the restaurant staff. Today I used the last of the raspberries so I can make room for this years crop! I made these in jumbo muffin tins and got 9 huge muffins. I also used the tip a friend gave me to make nice big domes on the muffins. Here's the tip: heat your oven to 425 degrees, the muffins need the high temperature to get the dome started, fill your muffin tins almost full. bake the muffins for about 7 or 8 minutes at 425 degrees, turn the oven back to whatever your recipe calls for and finish baking. This is the way I make all my muffins now and it hasn't failed me yet. I only had one adaption to this recipe, when the muffins were done I melted a 1/2 cup of butter, rolled the muffins in it and sprinkled sugar over the entire muffin. Enjoy! Orange White Chocolate Muffins


My husband and I went to the farmers market last weekend,in our little town we have a building that's one the main street that houses produce stands, people selling crafts, baked goods and butcher shops. Out in front of the building on the sidewalk you can also find produce stands with fruit and vegetables fresh from they're fields. It's a great place to be on a brisk saturday morning.
