Apple Harvest Cake

I made it yesterday as a dessert for a very simple dinner of homemade vegetable soup and rolls. It was Halloween night and it's any body's guess when the kids would be hungry so the crock pot was full of soup, the rolls were made and the cake (if they weren't to full of candy) was waiting and I ran off to work. I had the pleasure of having a piece of this for breakfast this morning. I loved it! Comfort food at it's best.




The first thing that came to mind was how moist it was, this is chock full of apples, the cinnamon - sugar ribbon that flows through the center of the cake gives this just the right amount of sweetness, not overly sweet but just right. I had it plain , right out of the pan and I was delighted with it! You could adorn this with a drizzle of glaze if you wanted to but it doesn't need it. It's the perfect coffee cake. I put a little bit of whipped cream on the top with a sprinkle of cinnamon. I'm thinking about the Edy's Apple Pie Ice Cream in the freezer with this cake....a match made in heaven.

Apple Harvest Cake
Taste Of Home


Ingredients:
2-1/4 cups sugar, divided
1 cup vegetable oil
4 eggs
1/4 cup orange juice
2-1/2 teaspoons vanilla extract
3 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
4 medium tart apples, peeled and cubed
2 teaspoons ground cinnamon
Whipped cream and additional cinnamon, optional

Directions:

In a large mixing bowl, beat 2 cups sugar, oil, eggs, orange juice and vanilla until well blended. Combine the flour, baking powder and salt; gradually beat into sugar mixture until blended. Stir in apples. Spread half of the batter into a greased 13-in. x 9-in. baking dish. Combine cinnamon and remaining sugar; sprinkle over batter. Carefully spread remaining batter over the top. Bake at 350° for 40-50 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Garnish with whipped cream and additional cinnamon if desired. Yield: 12-15 servings.

    I have a big bag of apples in my fridge from the farm and I need some yummy recipes. This one looks like it goes to the top of the list.
    I need to invite some company over- if I make it and no one comes over I'll eat it all by myself

  19. awesome. frankly, i wouldn't even need you to leave the light on for me. my nose would lead me directly to this beautiful creation, and don't even think for a second that a stubbed toe or banged knee would stop me. :)
