Chocolate Bottom Banana Bars

Oh my word these were absolutely crazy good! You should have seen the look on the kid's faces when they were eating these, it was priceless!

This recipe is so easy...make one batter, divide it in half, add the cocoa to one half, put the cocoa half down first, then the banana batter on top. Sprinkle with chocolate chips and bake! This recipe comes from Tammy's Recipes, if you haven't visited her go!! She has wonderful recipes over there! Don't expect these to last long...trust me...you'll be making them again!

Chocolate Bottom Banana Bars
Tammy's Recipes

Ingredients:
1/2 cup butter
1 cup sugar
1 egg
1 teaspoon vanilla
1 1/2 cups mashed banana (about 3 medium bananas)
1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup baking cocoa
1 cup chocolate chips
Instructions:
1. In mixing bowl, cream butter and sugar. Add egg, vanilla, and bananas, beating thoroughly.
2. In a separate bowl, combine flour, soda, baking powder, and salt. Add to creamed mixture and mix well.
3. Divide batter in half. Add the cocoa to one portion of the batter. Spread that portion in the bottom of a greased 9 x 13-inch baking dish. Spoon remaining batter on top, swirling gently with butter knife if desired, and sprinkle with chocolate chips.
4. Bake at 350 degrees for 30 minutes or until batter tests done with a toothpick or fork. Cool and cut into 24 squares.

Gorgeous looking salads, and I LOVE the idea of the cucumber one. That is just adorable. What a terrific presentation and I think it's one I'm going to use. Do you only use the outside of the cucumber (because otherwise the seedy part wouldn't hold up or look as nice) or maybe the seedless cucumbers and use the whole thing?

Those bars do sound good and easy to make. Yumm...I can taste their goodness.

I'm glad your SIL is recovering nicely. I'm sure it is through your good care and attentiveness that she is doing so well. You have a wonderful heart and are a good friend and relative. You have blessed her.

Gorgeous salads you have here, but my fav has to be those banana bars. YOU KNOW I will be making those as bananas are a favorie here, especially when combined with chocolate some way. I loved your brown sugar banana cake.. did u see I posted about it..and I can not wait to try these. Thanks Bunny! Ive missed ya!

As far as the throw them out of the hospital thing, it's called INSURANCE - the blood sucking thieves - and imagine what it'll be like before long with a national health care plan. Oh lordy...don't want me to even start gettin' political here.

Love the salads, but the bars look amazing!! Gotta put that on my to make list for sure.

I'm loving the look of the layered salad - a total colour explosion and would for sure get ahhs and ooohhs at the table.
I'm sad to hear about how your SIL was treated. Unfortunately, it's a scenario I hear all too often and totally not in the interest of the patient. I'm surprised they didn't offer help from a CCAC (Community Care Access) type homecare.

My mother makes a Lebanese layered salad that looks similar; however, uses very different ingredients. I always think layered salads are so aesthetically pleasing as well as delicious. I have missed you and all your wonderful posts! So nice to see you are back. About your SIL, it drives me crazy how hospitals do that now :( My brother had open heart surgery, not a triple, not a quadruple, but a five part bypass and he was sent home just a few days after! You are so sweet and good hearted to help her out and do everything you did. You rock mama :)

Love the Caribbean Salad idea. It's so much fun to do some really different, unique recipes that you don't have every day. I absolutely LOVE salad for dinner, but my husband always asks me where the big, juicy steak is! Bunny's bars are droolworthy.

I feel for your sister-in-law. Most of the civilized world is appalled at our health care system. Amazing. And sad. On the upside, I love these summer recipes and am reaching for the chicken. I loved the mixture of flavors. And am always up for a green salad while everything is fresh and has taste!

In my previous life as a MEdical Social Worker, I cant even begin to tell you the loathing I feel for the insurance companies that dictated to doctors when to let a patient go home. Money overrules good judgement quite often, doesnt it? If we were sitting in a room talking about this you would find thatI have a great deal of passion about this subject.
