Bacon Chicken

I don't make a whole lot of chicken for dinner...the reason?  To Read More, Click On The Recipe Title.
My hubby tolerates chicken....barely tolerates it I might add. He does have some recipes he'll actually request, like chicken and waffles or a recipe for Honey Sesame Chicken that Giz posted on Equal Opportunity Kitchen... thank you, Giz! SO...when I made this recipe, and he actually liked it, I HAD TO post it!
This was very easy to put together, which I really like. The aroma of fried bacon and onions was absolutely wonderful!
You might want to try this if you have a "picky-chicken-eater" too...they might very well be surprised!

Bacon Chicken

Ingredients:

* 6 slices bacon
* 1 Tbsp. butter
* 1 Tbsp. olive oil
* 6 boneless, skinless chicken breasts
* 1 onion, chopped
* 3 cloves garlic, minced
* 1/2 tsp. salt
* 1/8 tsp. pepper
* 1-1/2 cups shredded cheddar cheese

Preparation:
Cook bacon in 12" skillet until crisp, about 4-6 minutes. Crumble bacon and set aside. Pour bacon grease out of skillet, but don't wash or wipe it. Add butter and olive oil to skillet. Saute chicken breasts in this mixture over medium heat, turning once, until chicken is cooked and no longer pink in center. Place chicken in ungreased 12x8-inch baking dish.

Cook onion and garlic in drippings remaining in skillet; cook until onion is softened, then stir in salt, pepper and cooked bacon. Spoon over chicken breasts and sprinkle with cheese. Bake at 350 degrees for 10-15 minutes until cheese is melted. Serves 6

You had me at bacon LOL! Of course. :) I can understand your hubs aversion to chicken. It's so hard to cook just right, and doesn't have a lot of flavor unless it's bone in breasts or dark meat.

That spumoni marshmallow is wild!!

Oh you guys have done it again! Bunny, my husband is like yours. Unless the chicken is grilled and slathered in barbecue sauce, he prefers not to have it. I have found a few recipes he'll eat though. Carol, I have to try this side dish. Side dishes are always so boring, and we LOVE both of these vegies, so thank you! Cyndi, all I can say is wow! One of my favorite ice creams in pistachio, and these marshmallows are just gorgeous. Great job!

You've got a good looking seasonal meal there...cauliflower and broccoli are just coming into season here in Northern California. Cant wait to try the casserole.

My kids would love to make those marshmallows--great rainy day activity.

Chicken, I find, is an ingredient that needs different flavors to keep it new & different ~ your Bacon Chicken recipe does it in spades!

Can't go wrong with bacon. I love broccoli and cauliflower and it's two of the few veggies my kids will eat. I was just looking at homemade marshmallows yesterday--these look really fun!

I would be very happy with any one of these three delicious recipes. I am a HUGE chicken fan, and with the bacon, I know it's super delicious.

Always good to see a new veggie dish (that's a weak point in my repertoire), and the broccoli/cauliflower combo sounds very good with good color for the dinner plate.

Who doesn't love marshmallows! A beautiful presentation; have not seen the spumoni ones like this before so they are extra fun!

I think you can get anyone to eat veggies if you put cream cheese in them! This looks fantastic. I'm so loving the chicken with the bacon and cheese...so comforting. The dessert is over the top, very creative.

Those are some impressive marshmallows. I haven't gotten around to trying to make my own yet, but I know I will at some point. You really have a great variation on them.

It's funny. You and I have opposite husbands. Chicken is one of the only meats that both my husband and I will eat. I have to find tons of chicken recipes. The problem with me is that he won't eat bacon. I, on the other hand, am dying to make and eat your bacon chicken!
