Apple Pie Muffins

These are great muffins, the kids just love these. I have a tendency to bake things that the kids can grab and run with, and muffins fit into that category, along with cookies, bars and cupcakes. They'll grab these in the morning for breakfast as they're running out the door! My friend gave me this recipe and she doesn't remember where she got it. I'm sure there are lots of variations of apple muffins but this is the one I go to when I want to make fantastic apple muffins.
I made these in jumbo muffin tins and got 7 from the recipe, other than that I followed the recipe to the T.

Southern Brownie Pie

I know I've been posting alot of pies lately. I 've never been very good at making pie crust. They never turned out the way everybody else's did. But now that I started making Paula Deen's Perfect Pie crust my crust turn out great. So I started making all those pies I haven't made for years. Sorry, I promise to move on after I post the pie I made for Sugar High Friday. I made this one just because I've never made a brownie pie before. It was very easy and good. I like that in a pie, easy and good, doesn't get any better than that. This recipe also got my attention because it was a "Southern" Brownie pie and I love southern recipes.

Raspberry Muffins

I finally got to use up the rest of the raspberries I froze last summer. I love freezing berries so I can use them during the winter months. At Christmas last year I made Lemon Raspberry Tea bread using the raspberries I froze, I made them in mini ceramic loaf pans and gave them as gifts to the restaurant staff. Today I used the last of the raspberries so I can make room for this years crop! I made these in jumbo muffin tins and got 9 huge muffins. I also used the tip a friend gave me to make nice big domes on the muffins. Here's the tip: heat your oven to 425 degrees, the muffins need the high temperature to get the dome started, fill your muffin tins almost full. bake the muffins for about 7 or 8 minutes at 425 degrees, turn the oven back to whatever your recipe calls for and finish baking. This is the way I make all my muffins now and it hasn't failed me yet. I only had one adaption to this recipe, when the muffins were done I melted a 1/2 cup of butter, rolled the muffins in it and sprinkled sugar over the entire muffin. Enjoy!  To Read More, Click On The Recipe Title.

Butter Toffee Cookies

I got this recipe from Diana's Desserts. It's an excellant cookie! It has a crisp outside but the centers are soft. The recipe said this makes 5 dozen cookies. I didn't get 5 dozen, I only got 2 1/2 dozen. I don't know if I just made them bigger or what, next time I'll make a double batch cause these aren't gonna last long around here!!

Peanut Butter Pie

This is one of my husbands favorite pies. The recipe was given to me by my brother in law's Nana . It's a great summertime pie. It's not a good picture though, I'm still working on the picture part of having a blog. I usually make this with a chocolate graham cracker crust. But today it's in a regular pie crust. This is easy , very easy! You could do sooo many things with this recipe. I thought about brushing the crust with chocolate or maybe adding a chocolate ganache layer on the bottom. But those things didn't happen today, but next time.....!

Chopped Apple Cake

I've been thinking about this cake for weeks. It's a favorite of mine and was also one that my Dad liked. He really didn't care for traditional frostings , they were to sweet for him , but he did like this! This cake is full of apples. The glaze on top is made with brown sugar and butter, it makes this cake! The recipe comes from a Grange Cookbook from Pennsylvania that I've had for years. It's a mainstay in my kitchen, I have made some great recipes from this book.

Orange White Chocolate Muffins

My husband and I went to the farmers market last weekend,in our little town we have a building that's one the main street that houses produce stands, people selling crafts, baked goods and butcher shops. Out in front of the building on the sidewalk you can also find produce stands with fruit and vegetables fresh from they're fields. It's a great place to be on a brisk saturday morning.  To Read More, Click On The Recipe Title
