Elvis Cupcakes!

I had quite a few very ripe bananas today, I made an Elvis Cake that went to my brothers house and Elvis cupcakes for my house. I feel like I've done dishes all day long.....wait I did do dishes all day long! The recipe comes from Chowhounds and it's a beauty. I used all the chocolate chips in my brothers cake so I used chocolate chunks in my cupcakes. The recipe calls for just milk which I did for the cake but made buttermilk for the cupcakes. A couple hours after the cake was delivered to my brothers house I called to ask how they liked it and it was completely gone. Yep, gone. That's how good this recipe is. I will print the original recipe and add my changes to the side. I got 24 cupcakes from the recipe, I also baked them for about 20 minutes give or take a few minutes so test with a wooden toothpick for doneness.





ELVIS CAKE
Chowhounds

Recipe

2 cups all-purpose flour
1 1/2 cups white sugar
1/2 cup butter or shortening ( I used butter )
1 cup milk ( I used buttermilk)
3 1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon vanilla
3 eggs
2 mashed bananas ( I used 3 bananas)
1/2 tsp banana extract ( I didn't have banana extract )
2/3 cup mini chocolate chips, more for sprinkling on the finished cake

Mix together the flour, baking powder and salt and set aside. In a large bowl, cream sugar and shortening until light and fluffy. Add eggs one at a time, beating thoroughly after each addition. Add flour mixture alternately with milk, beating just to combine. finally, stir in vanilla, mashed bananas, and banana extract. Pour batter evenly between two greased 9 inch round cake pans. Sprinkle each cake with 1/3 cup of mini chocolate chips and bake at 350 degrees for 35 minutes, or until a toothpick inserted into the cake comes out clean.

Frosting
I halved this recipe for the cupcakes

2 sticks of butter, room temperature
1 cup of smooth peanut butter
4 cups of powdered sugar
Up to 2 Tbs milk

In an electric mixer cream together the butter and peanut butter until smooth and fully incorporated. Add the powdered sugar a cup at a time and use milk to adjust the consistency to your liking.

Hey, these sound good but, I am not sure about the peanut butter frosting. You made them look rockin' though. hehe :)

This is new to me, though I shouldn't be surprised that Elvis has a cupcake named after him. Love the combination of bananas and chocolate, with a peanut butter frosting.

Well Bunny-I also have bananas to use up.....do I dare???? Maybe I'll make them.....freeze them unfrosted-and take them out a few at a time......these look SO good!!!

elvis may have made some questionable choices in his life, but picking bananas, peanut butter, and chocolate as a favorite combination was not one of them. these look stellar!
