Mom's Best Apple Cake


I love old fashioned cakes like this.  There are lots of apples in this cake, it's soft and moist. There's also a hot caramel sauce poured over the cake after it's baked that makes this outrageously delicious!

I've been making a cake similar to this for about thirty years.  But I've gotta tell you, I like this one better.  What makes this cake killer is the caramel frosting you make and pour over the cake.  Make the cake let it cool ,  make the caramel sauce and pour the hot caramel sauce over the cake.  Uh huh, gooey delicious caramel over a moist apple filled cake.  *Sigh*  You know you need this kids.  It's easy, fast to make and incredibly delicious.  This is a keeper!  Enjoy!

Mom's Best Apple Cake

Ingredients

Cake
  • 1 cup vegetable oil
  • 2 cups sugar
  • 3 eggs
  • 1 ½ tsp. vanilla
  • 2 cups flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  •  3 cups apples, peeled and diced
  • (If you would prefer to add cinnamon to the cake, add 1 tsp)

Topping

  • ½ cup butter
  • 1 cup brown sugar
  • ¼ cup milk


 Directions

Preheat oven to 350 degrees. Grease and flour a 9 x 13 baking dish.

Cake: In a large mixing bowl, beat together the oil, sugar, eggs, and vanilla. Add the flour, salt, and baking soda. Beat together until well-incorporated. Stir in the apples.
Pour the cake batter into the prepared baking dish. Bake for 55 – 60 minutes. Cool completely before adding the topping.

Topping: In a saucepan, combine the butter, brown sugar, and milk. Cook over medium heat, stirring constantly, until the mixture boils. Boil without stirring for 3 minutes. Remove from heat and immediately spread over the top of the cooled cake. Let sit for an hour prior to serving.

Hello...I made this cake last weekend after picking fresh apples. I added a little cinnamon and it turned out GREAT!! Took it to work and it was gone in no time.
Definitely a keeper...have more apples to use up!!

Emily, I would put the topping on if your going to freeze it. freeze the cake part and then when you're ready to un freeze it,let it come to room temp ,make the topping and pour over the cake.

Anonymous, yes add cinnamon it'll go very well in the cake, maybe a tsp. if you sub butter for the oil, melt the butter first.

Tried this recipe today....I baked the cake for about 30 mins because otherwise it would have burned and dried out! To prevent it from being dry I poked holes in the top and poured the carmel sauce on top. The batter wasnt the usual cake batter. But the cake tasted great.

This cake is fantastic! I have made it twice in the past two weeks and everyone has loved it and asked for the recipe. The additional beauty of this cake and recipe is that not only is delicious, but it is so easy to make! Thank you!

I made this with the addition of cinnamon as some commenters suggested. The cake was really easy to throw together. Mine cooked the way that another commenter mentioned, where the top looked almost burned after 30 minutes but the inside was liquid. After 50 minutes it was fully baked and the top didn't actually burn. My issue was with the topping. The caramel dried hard--brittle like. I'm assuming I cooked it too long?

Shannon, yes sweetie you cooked it too long. Next time start with low heat and keep stirring until it boils, after it boils stop stirring and let boil for 3 minutes. It'll climb the pan a little bit. Hope you do make it again! Just remember low heat for the sauce.

If you don't want to 'make' your own car
amel sauce then buy a jar of caramel topping (like you put over ice cream) and pour it into a microwave cup and microwave it until it is hot..then pour this over the cake that has been poked with holes. That way you won't have to worry about your caramel sauce getting too hard

I made this twice in 3 days! So easy and everyone loved it. I followed the directions but added cinnamon the 1st time, today I added walnuts as well. My husband loves it both ways. A keeper, I'll even be making it for Thanksgiving.

Happy Thanksgiving! I'm taking this goodie to share with my family. I baked it in a spring form pan. Timing was perfect and it's such a pretty cake. Mine did deflate in the middle a bit, but it's still great. I'm making the topping shortly, but I think this would be great and very pretty sprinkled with powdered sugar.

Bunny. Found your cake on Pinterest. My husband loves apples and he loved this cake. I did make an adjustment of 1/4 tsp allspice, 1/4 tsp ground cloves and 1 tsp cinnamon. It was delicious and I use condensed milk trick for caramel sauce. Thank you for the cake. I'm taking it to my next church social.
