Delicious Orange Cake With Orange Buttercream Frosting

The aroma in the house was delicious as this cake was baking. The house was filled with the wonderful scent of orange. This cake is moist and light with a nice soft orange flavor.  I did add a little more zest than the recipe called for after reading the reviews, I went from 1 1/2 tsps to 1 heaping Tablespoon.  I added 1 tsp more zest to the frosting as well.  The orange flavor was perfect.  The amount of frosting in the recipe is just enough to spread some in the middle and cover the cake.  You may feel like there isn't enough to go around, but it does.  You can always make another half batch of frosting if you want more.  The amount of frosting is perfect  it's not smothered in it, but there's enough to compliment the cake very well.  This is a very easy quick cake to make. At Allrecipes.com where this recipe came from, the title of the cake is... Beat and Bake Cake.You don't even use a mixer.  The recipe calls for Superfine Sugar.  You can make your own by putting regular sugar in your food processor and whirling it around about a minute.  I also switched out the milk in the recipe for sour cream, I was out of milk. If you love the wonderful flavor of orange, your going to love this cake.  It would make a wonderful addition to your Thanksgiving Dinner dessert table.  Enjoy!

Beat and Bake Cake
Makes two 8 inch round cakes

Cake:
Ingredients
2 cups all purpose flour
1/2 teaspoon salt
3 teaspoons baking powder
1 1/2 cups superfine sugar ( make your own by putting regular sugar in a food processor and processing)
1/2 cup milk ( I used sour cream)
1/2 cup orange juice ( I used a total of 3 medium oranges for the juice and zest in the cake and frosting)
1/2 cup oil
3 eggs, beaten
1 1/2 teaspoons grated orange zest ( I used 1 heaping TBLS)

Frosting:
Ingredients
6 Tablespoons butter, softened
2 cups confectioners sugar
2 Tablespoons orange juice
1 teaspoon vanilla
1 teaspoon grated orange zest


Directions: 
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8-inch round cake pans.
  1. In a measuring cup, combine milk, 1/2 cup orange juice, oil, beaten eggs, and 1 1/2 teaspoon orange zest. Set aside.
  2. Sift flour, salt and baking powder into a large bowl. Mix in sugar. Make a well in the center and pour in the milk mixture. Stir until thoroughly combined.
  3. Divide batter into prepared pans. Bake in the preheated oven for 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
  4. To make Orange Butter Frosting: Cream butter until smooth. Gradually beat in confectioners' sugar. Beat until light and fluffy. Beat in 2 tablespoons orange juice to bring to spreading consistency. Stir in vanilla and 1 teaspoon orange zest.

It certainly does look delicious Bunny. I like the thin smearing of icing on top. I agree that it would compliment and not overwhelm the cake.
