You can do so many different things with this cake. You can put a glaze on it, frost it, make trifles with it or....just eat it very simply with your favorite fruit. With absolutely no fat in it this is the perfect light dessert. Make it, eat it and leave the guilt behind. Now that's my kinda dessert.

1 1/4 cups cake flour , sifted
1 1/3 cups plus 1/2 cup sugar, divided
12 egg whites
1 1/4 tsps cream of tartar
1/4 tsp salt
1 tsp vanilla extract
1/4 tsp almond extract
Preheat oven to 350 degrees.
Sift together flour with 1/2 cup sugar four times in small bowl.; set aside.
Beat egg whites, cream of tartar, salt and extracts in large bowl with electric mixer at high speed until stiff peaks form. gradually add remaining 1 1/3 cups sugar, beating well after each addition. Fold in flour mixture. Pour into ungreased 10 inch tube pan.
Bake 35 to 40 minutes until cake springs back when lightly touched with finger.
Invert pan; place on top of clean empty bottle. Allow cake to cool completely in pan before removing from pan.

Love simple - I prefer dry simple cakes over the buttercreams and saucy cakes any time. I wonder if it's possible to get enough air into the egg whites in the carton. Then again, maybe I have no clue what I'm talking about.
That's a good question Giz, I'm gonna have to find out about that, it would save having all those egg yolks wouldn't it.
