Pulled Pork w/ Homemade Sandwich Rolls And Homemade Yeast Doughnuts

Picture cake and rolls 091

A complete dinner post, I was off work today and felt very ambitious. It started with making the Pulled Pork Sandwiches and just snowballed after that!  To Read More, Click On The Recipe Title.

Pulled Pork Sandwiches on Homemade Potato Rolls served with homemade french fries.   And last but definitely not least...Homemade Potato Yeast Doughnuts. I started the morning by putting the boneless pork roast in the crock pot and adding 1 cup of onions, a bottle of BBQ sauce ( I used Kraft), 3 TBLS of honey and a couple dashes of hot sauce.

The house smelled wonderful when that pork started cooking! I knew I didn't have to worry about it for the rest of the day so I concentrated on making the sandwich rolls. I have a Potato Bread Recipe that you can find here that's out of this world good and decided to try my hand at making sandwich rolls with it. I wanted big ole rolls to make a nice size sandwich, a manly sandwich. The potato bread recipe makes 2 loaves of bread so I figured I'd make the rolls and a loaf of bread, somewhere along the line I started thinking ...well I'm making dough ,so why not try making doughnuts with it. Have I mentioned I've never made yeast doughnuts? The one and only time I tried to make cake doughnuts I burned them while frying them, I haven't tried them since. So why was I in the mood to torture myself with another doughnut recipe...I don't know, like I said I was feeling ambitious I guess, if the doughnuts bombed I still had the rolls. I mixed up the bread dough, this dough is very sticky.

This is what it looked like with 5 cups of flour added to it. The recipe calls for 6 cups of flour but I used that last cup to knead it. It'll still be sticky after that 1 cup is added but that's good! You want it that way. I greased a bowl and put the dough in it, covered it and let it rise. After it rose, I cut it in half and started cutting hunks off it for the rolls, making them all the same size. I got 9 sandwich size rolls out of it, you could make them smaller if you'd like. I put the rolls on a greased sheet pan and let them rise. Then I started on the doughnuts with the other half of the dough. I rolled it out to about 1/2 an inch thick then I used a glass to cut them out with and the cap off a Kraft Dressing bottle to make the hole in the middle, pretty fancy equipment I've got huh!! LOL!! I put them on a greased cookie sheet and let them rise.

Sandwich rolls after they rose up. I know they look big but trust me they were just the right size.

Doughnuts after they rose up. So all that's left to do is bake the rolls and fry the doughnuts. The bread goes into the oven at 350 degrees for about 20 minutes. While it's in the oven I start frying the doughnuts. This was the part I wasn't looking forward too. I got the oil heated up and burned the first one, then lowered the tempt added more oil and started frying. They turned out very very well! I put a simple glaze of powdered sugar and milk on them, they were sooooo soft and good!

The sandwich rolls came out of the oven and I brushed them with butter, they were ready to have they're picture taken!

Potato Bread Recipe

3/4 cup sugar

2 eggs w/ milk to make 1 cup liquid

Boil potatoes until tender. Mash and add the 1 cup of potato water to a large bowl.

Add yeast to a small bowl with 1 tsp sugar and add the warm water.

Add the sugar, melted butter, and the salt to the mashed potatoes. Stir. When the potato water mixture is cool, mix in the yeast. Add the eggs and milk.

Add the flour a cup at a time and make a soft dough. Place dough on a floured surface and knead it about 10 minutes. Dough should be smooth and elastic.

Let dough rise in a warm place until doubled, covered. Knead a few minutes and divide the dough into 2 loaves. place dough ingreased bread pans and let rise, bake at 375 degrees for 30 to 40 minutes.
