Chocolate Pinwheel Cookies and Slice and Bake Brownie Rounds

This is the first time I've ever made pinwheel cookies. I really enjoyed making this, A little hint...use parchment paper and only let them in for the shortest baking time. The kids gobbled these up!  To Read More, Click On The Recipe Title.


 As you'll see when I started looking for cookie recipes I went to Land O lakes, I wanted slice and bake cookies, make them up one night ,bake them the next. Easy and stress free, that's my motto for this cookie baking season. I just hope it stays that way!! LOL!!

Chocolate Pinwheel Cookies
Land O Lakes

1 cup sugar
1/2 cup LAND O LAKES® Butter, softened
1 egg
2 teaspoons vanilla
2 (1-ounce) squares white baking bars, melted, cooled
1 2/3cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 (1-ounce) square unsweetened baking chocolate, melted, cooled

Combine sugar, butter, egg and vanilla in large bowl. Beat at medium speed, scraping bowl often, until creamy. Reduce speed to low; add cooled melted white baking bars. Continue beating until well mixed. Add flour, baking powder and salt. Continue beating until well mixed. Remove half of dough. To remaining dough in bowl add cooled melted chocolate. Beat until well mixed. Shape each half of dough into 6x3-inch rectangle. Wrap in plastic food wrap; refrigerate until firm (at least 1 hour). Roll out white dough to 15x7-inch rectangle on lightly floured waxed paper. Repeat with chocolate dough. Place chocolate dough on top of white dough. Roll up, jelly-roll style, starting with 15-inch side. (For easier handling, roll can be cut in half.) Wrap roll in plastic food wrap; refrigerate until firm (at least 2 hours). Heat oven to 375°F. Cut rolls into 1/4-inch slices. Place 2 inches apart onto ungreased cookie sheets. Bake for 7 to 9 minutes or until edges begin to brown

These smelled like brownies baking in the oven!! Seriously good! I didn't have mini semi sweet chocolate chips so I used regular, I also didn't have any large grain sugar to roll them in, they were good without it!

1 1/2 cups sugar

1 cup real semi-sweet chocolate chips, melted, cooled
1 egg
1 teaspooon vanilla
2 1/2 cups all-purpose flour
1 1/4 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup mini real semi-sweet chocolate chips
1/4 cup large grain sugar, if desired

Combine sugar and butter in large bowl. Beat at medium speed until creamy. Add melted chocolate chips, egg and vanilla; continue beating until well mixed. Reduce speed to low; add flour, baking powder, baking soda and salt. Beat until well mixed. Stir in mini chocolate chips by hand.Divide dough in half; shape each half into 12-inch log. Wrap each in plastic food wrap; refrigerate until firm (1 to 2 hours).Heat oven to 375°F. Cut logs into 3/8-inch slices with sharp knife. Place 1 inch apart onto ungreased cookie sheets. Sprinkle cookies with large grain sugar, if desired. Bake for 8 to 10 minutes or until set. Let stand 1 minute; remove from cookie sheets. Cool completely.

All the cookies sound great! I especially love the ones with the kisses (go figure! he he). Great tip on freezing first. I'm also so jealous you have the pumpkin spice kisses. They don't have them in my neck of the woods and I have looked every time I go to the store since I see them on Jenny's site.
