I guess all the bad weather we've had but me into an apple crisp mood.  Even though I am anxiously awaiting fresh berries in the spring, the weather took me back to Fall wanting warm apples, cinnamon and "crisp".  Not wanting to make a whole pan of apple crisp I decided to make this instead.  This baked apple met and went beyond my expectations!!  My first bite was a "WOW" moment.  The crisp on top combined with the warm apple mixed with the cherry preserves in the middle...yeah this is awesome!  I may never make a pan of apple crisp again, who needs to when this is so easy and delicious!  I cut the recipe for the topping in half and made 2 whole apples.  I also didn't half the apples, it was more like taking about 2 inches or so off the top, coring the inside and filling with 1 Tablespoon of the cherry preserves. Can you imagine what this would be like with peaches?  Oh my GOSH!  A crispy top with let's say raspberry preserves in the middle or marmalade?  Ah... the possibilities.  It just goes to show you, delicious doesn't have to be complicated! Baked Apple With Crisp Topping

Ingredients :
2 apples (recommended: Fuji or McIntosh)
1 teaspoon lemon juice
1/4 cup strawberry jam, jelly or preserves ( I used cherry preserves)
2 tablespoon all-purpose flour
3 tablespoons butter, cold and diced
3 tablespoons brown sugar
1/2 cup oats, uncooked
1/4 teaspoon ground cinnamon
Pinch salt

Directions:
Preheat oven to 350 degrees F.

Cut each apple in half along its equator. Using a melon baller, cut out each side of the core, creating a rounded hole. Rub exposed apple flesh with lemon juice. Place 1 tablespoon of jam into each hole. For the topping: in a small bowl mix together flour, butter, brown sugar, oats, cinnamon and salt. Press this mixture on the top of each apple, covering jam. Place in a baking dish filled with about a 1/4-inch of water. Bake until top is golden brown and apple is tender, about 35 to 40 minutes.
